Thai Green Curry

Serves 4.

  • 1 Jar of chillipepperpetes Thai Green Curry Paste
  • 1 Red Bell Pepper sliced into strips
  • 1 Can of Coconut Milk 400ml
  • 1 Onion chopped roughly
  • 160g Babycorn cut in 1inch chunks
  • 150g Fine Green Beans cut in halves
  • 6 Mushrooms sliced
  • 1tbsp of oil

 1. Heat the oil in a large saucepan over a medium/high heat. Place the Onions, Green Beans and Babycorn in the pan and fry for 5 minutes stirring frequently.

2. Add the Mushrooms and Bell Pepper and fry for another 3 minutes.

3. Add the jar of Thai Green Curry Paste and half the can of coconut milk and stir thoroughly.

4. Turn heat down to simmer. Add the rest of the coconut milk. Allow to simmer for 15 minutes or until the babycorn is soft.

Serve with rice.

You can always cook it with chicken or fish - use 500g of either.

This is also quite a mild sauce so if more heat is needed just add a few extra chillis, our Long Thai's are a good addition. We also don't add any fish sauce to our Thai Paste so is completely vegetarian.
