Guajillo 25g, heat 3/10 - The most popular red chilli in Mexico. The guajillo has a very distinct flavour of green tea with berry overtones - In conjunction with a sweet heat.Known as caribe in its flaked form. I use it on everything as its so mild the kids have no problem with it.

Ancho 25g, heat 3/10 - Used in so many Mexican dishes, the Ancho is mild & sweet with berry flavours. Can be stuffed (relleno), cut into strips (rajas) & generally added to most foods.

Kashmiri 20g, heat 3-4/10 - One of the most distinctive of the Indian chillis with seet flavour and a medium heat. Blend with spices to make delicious currys.

Pulla 20g, heat 4/10 - Closely related to the Guajillo the Pulla has flavours of green tea & is the red chilli of choice in parts of Mexico.

Facing Heaven 20g, heat 5/10 - At last we have secured a supply of this fantastic chilli which is popular in Szechuan cooking, with citrus flavours and a lovely slow medium heat.

Chipotle 25g, heat 6/10 - Wonderful smokey aroma and flavours of chocolate and tobacco. It adds such depth to any dish. A must with every order. This is the best selling chilli of all time ... De Arbol 20g, heat 7/10 - The original Cayenne chilli from Mexico. Sharp flavoured with a front of mouth burn. Ideal chilli for blending with spices to make fiery currys and sauces.

Long Thai 20g, heat 8/10 - Used in many Thai dishes this hot chilli is great in stir-fries and currys.

Birdseye 30g, heat 8/10 - Searing heat and grassy flavour. Worldwide this has got to be the most grown chilli. Grown in Africa, India, China and probably many other places. Undoubtadly related to the tepin, it left Mexico many centuries ago with the Portuguese.

Naga Bih Jolokia 15g, heat 10+++/10 - Fantastic habanero flavour with incredible heat. Officially the worlds hottest chilli. Makes fantastic curries and truly red hot sauces. As hot as many extracts but with huge flavour and loooonnnggg burn.
